Mezcal Derrumbes Michoacan is crafted using two agave species: agave Cupreata, contributing mature fruit aromas, and agave Cenizo, imparting herbal notes. The production process involves cooking the agave in an underground stone pit using black oak. Following this, the fermentation takes place in underground tanks lined with pine wood, enhancing the herbal character of the mezcal.
